Red Bean Rolls ( 红豆面包卷 )

有好一段时间没有做面包了。今天就来做这个很好吃的红豆面包卷。






Sweet Bun Dough Ingredients (17 buns)
500 g bread flour
20 g milk powder
75 g castor sugar
6 g salt
8 g instant yeast
5 g bread improver (optional)
1 lightly beaten egg
250 - 270 g water
60 g softened butter
Red bean filling:
Red bean paste (20g balls)

Method
1. Mix flour, milk powder, sugar and salt in mixer on low speed 1 min.
2. Add in yeast, egg and water. Mix on low speed for 1 minute, then medium speed for 8 minutes.
3. Add butter and mix for 5 minutes more on medium speed until a soft, smooth and elastic dough forms.
4. Remove dough from mixing bowl, shape into a ball and leave to proof until double in size.
5. Divide the dough into 55 gram portions. Roll each portion in to a ball and then cover and set aside for 10 minutes.
6. Flatten a ball of dough and place a 20 g cube of red bean paste into the center of the dough.  Roll into an oval shape. Use a sharp knife to score the dough surface at 45 degree. Turn over the dough (score side facing down) and roll the dough in a tube shape. Joint the tube like dough into a round shape.  Seal the joint area.  
7. Leave to proof until double in size (about 1 hour).

8. Brush with egg wash and bake at preheated 180C for 15-18 mins until brown.
